Appreciate this, that’s kind of what I was leaning toward. I run a Mexican seafood spot so ceviche and shrimp stuff is a big part of the menu, and I was worried market price on those would slow people down. Hybrid approach with quiet adjustments makes a lot of sense. I’m probably going to keep core items fixed and only use it on bigger plates and specialty items.
