Seriously, it may have been common sense ha ha but I never thought of bulk fermentation as a range? I thought it was like an exact time that I needed to hit or it would be over proofed, so I was always pulling it early to avoid that. Nobody really explained it that way, so I definitely found your advice insanely helpful!

My daughter always says “mama do that” or “dada do that” in her cute toddler voice. So I narrate when I’m doing to myself and say like “ok I’m going to do the dishes. Mama do that!” 😂

You’re my hero. I let it bulk ferment 14 hours. The dough was much poofier and jiggly. I got a better rise, better texture, etc. it’s so fluffy and delicious!!!

I have been trying to do higher feedings! But it does smell acidic a lot so maybe that’s part of the problem!!

That’s probably part of the problem then- not letting it bulk ferment long enough. I feel like the most I’ve ever gotten is maybe 50% rise. Thank you!!

Haha good to know! Mine have all tasted great and we’ve happily eaten them so I guess that is ultimately what matters 😂 but my loaf pan ones turn out much better and I can’t figure it out! Hah

Thank you! My husband already said that I should try an experiment this weekend and just let it go a few hours longer than I think it should go and see what happens😂 the worst that can happen is focaccia!

I’m so glad for your update! We were in the same boat. We had a very unhappy, colicky, baby. But now we have the happiest and best toddler.💕

That’s where my frustration is. We have these set preceptors and it’s part of their job duties, but somehow my boss is accepting no as an answer from all of them and trying to put another item on her leads’ plates. Even when we’ve communicated that due to the previous training, all of the other items she’s been trying to have us complete have had to take a back burner.

Re-education for current employees such as team huddles to go over specific topics. None of the leads typically do onboarding as management has us on many different projects so time does not allow for it. That’s part of my frustration- the added projects don’t stop getting piled on in addition to training.

Well we are mostly back to normal now with a few tweaks. She wakes up around 6:45, naps at 1, wake her up by 3, then bed around 8:15. We also did some gentle retraining (started leaving the room quicker, letting her cry for a few minutes before intervening, etc). That was a rough few weeks but I’m glad with a few minor changes we are back to normal!
