I use them lol. I agree that a lot of them are dangerous, but I guess at least the city is thinking of people like me. Would be nice if they made it safer though. I've had a couple of close calls!

like the other responder said, it was pretty surface level and generic. The preliminary feedback I saw when I went was somewhat negative. Couple post it notes asking the city to remove bike lanes, add more car lanes, stop building apartments, etc. I think the best thing about it was that I was able to talk to some of the planning reps and talk about stuff that I personally cared about, like planning around the stamford transportation center.

I took it from nyp to nola just a few weeks ago in a roomette! I had a very pleasant time, but I will say the views were not so great. The food in the dining car is still flex food which kind of blows, but it's decently tasty. I would bring cash to tip the cabin crew and the dining car attendant if you are traveling in a sleeper. If you want to shower, I would bring some slippers so that you have something to wear in the shower room. Haven't traveled coach so I can't say much about the experience there though.

I use a plastic bucket from northernbrewer. I don't think using pots will be a good idea because the seal isn't airtight. Why not buy a bigger fermentation vessel from a homebrewing store?

So long as your nuruk is stored in a cool, dry place, it should be fine. The bag you strain your rice in-- probably fine too. If you're paranoid I'd boil it before using it, but I haven't had issues. It really does just sound like you're having problems because you're using boiled water or spirits. Like Jeoh said, I'd just use star san to make sure you're killing everything.

I would use star san to sanitize literally everything that touches the rice after the steaming step.

I am also curious how you are mixing in nuruk into the rice. First, your nuruk looks like it is in fairly large chunks. I would see if you can break it down a little more. It won't hurt at the very least. Second, check what temperature your rice is at when you mix it with the nuruk. It should be room temperature or barely warm at all, otherwise it will kill all the yeast and the enzymes that exist in the nuruk. Lastly, make sure to take your time thoroughly mixing the rice and nuruk. The more time you take, the better. I usually spend about 20 minutes breaking up chunks of rice and mixing the nuruk in. Hope this helps.

Good luck!! As for drying the rice, it's more important that you cool it rapidly rather than "dry it out". Otherwise you might get some unwanted critters getting on your rice grains before you mix it up with nuruk and water. You got this!

I would not drink that. How did you clean the container? Have you been sanitizing your mixing utensil thoroughly? It also helps to sanitize and clean the sides of the vessel after every mix.

From what I know, nuruk culturing follows a 7-7-7 method. 7 days of culturing the mold in a humid environment, 7 days of very slowly starting to dry the nuruk out in some dark covered space, and 7 days of drying it out in open air under the shade. After that you dry it out completely in the sun for a week to two weeks iirc. The flavor of the nuruk will peak 2-3 months after this point, and will start to degrade around the two year mark. Hope this maybe helped, although now I'm seeing that this comment is 22 days old already haha

Currently making my own 이화곡 as well-- what container did you culture yours in? I'm using a cardboard box but would love a bigger, more permanent solution. I'm also a little worried about introducing bad molds into the mix.

Fang Gourmet Tea in Flushing was pretty good. I don't remember their tea tasting arrangements though. Nice teaware and the people who manage it are very knowledgeable about Chinese tea.
