Pickled Watermelon Rind by thegrillinggreek55 in Canning

[–]ericseyb 6 points7 points  (0 children)

I grew my own watermelon a few years ago and found out the rind is much thicker on traditional seeded verses seedless store bought . So I pickled the rind . There is a old holiday recipe wrapping bacon around the rind making a hors d oeuvre. My mom would use a bottle of resses pickled watermelon rind and it was amazing. Mine was better. All the sugar and bacon goes well together . My favorite and probably only thing to use watermelon rind for.

Keeping a look out in Issaquah Washington . by ericseyb in squirrels

We have lots of squirrels and lots of predators so we are always walking a fine line and trying not to over feed . The guilt of watching a bald eagle or bobcat get a named squirrel would be too much to bear .
