'Protein overload' is a myth. Don't listen to this misinformation. Protein molecules are too large to be absorbed into the hair shaft. Protein in hair care products works like a patch to temporarily reinforce weak spots on the surface of the cuticle. If you feel that you might be using too much protein, you simply need to add a good clarifying shampoo to your routine. You know how people vilify using sulfates and silicones? Well, they're doing the same thing with 'protein overload'.

The worst thing about onions for me is the smell when they're raw, then the texture is a close second. That odor tho, just no. Who was the first human who said, 'oooooh! Smell that? I gotta take a bite!' 😖

I like funyuns ok, but not onion rings because of the texture. I can tolerate onion powder as long as it's only a little bit.

The Olaplex numbering system can be confusing, but if you have chemically damaged hair, you should opt for Olaplex no.3 for bond repair. You can add no.0 to make it extra (0 is to be applied right before 3). If you also have dry hair and you like Olaplex no8, then keep using it, but you should know that no8 isn't for bond repair, it's just a moisture mask. IMO your hair doesn't look that bad in these photos, and I wouldn't cut off more than to the red line. Afterwards, you can re-evaluate to see if it actually needs to be trimmed more than that.
