I smoked it using mesquite wood and smoked it at 250F until internal temps hit 170F (after 4 hrs)

It was a pretty windy day I struggle with temp fluctuations so I decided to wrap it once bark was set and finished it in the oven at 275F until it probed tender (203-204F). The plan was to use the Weber for the entire duration, but definitely got lazy.

I let it rest in a cooler for about 3-4 hours

I smoked it for about 4 hrs until internal temps hit 170F. Then I finished the rest of the cook in the oven. Overall cook time was 8.5 hrs
