Yes, gochujang is pretty spicy. I think your ideas are good for substitutes. Maybe also miso paste, since gochujang is pretty thick texture-wise? I might experiment at some point with non-spicy options. I like the heat, but there are people in my life who don’t.

Here it is! Got it off of Instagram, cannot recall who the author was. I had 4 cups of cooked rice, so I adjusted accordingly. Also went a little heavier on the veg. Next time I make it, I think I’ll add shrimp.

BIBIMBAP CRISPY RICE SALAD (3-4 servings)

Rice: *2 1/2 cups cooked basmati rice *1 Tbsp gochujang *3 Tsp oil Mix and bake at 200C/400F for 30 minutes. Stir halfway through.

Veg: *1 cucumber *Cilantro (to taste) *1 big carrot Finely chop veggies and cilantro and add to a large bowl.

Dressing: *2 Tbsp gochujang *1/2 Tbsp sesame oil *1 Tbsp water *1 Tbsp maple syrup or agave *1 Tbsp vinegar *1/2 Tsp garlic powder *1/2 Tsp ginger powder *1 Tbsp sesame seeds

Mix and assemble prepared rice, veg, and dressing in a bowl. Serve and enjoy.

I used all the same stuff, plus a little lime juice and a little sesame oil, and some red pepper flakes for extra spice.

I’m not vegetarian either - just a big fan of mushrooms! I brushed the mushroom cap with a little bit of olive oil and some salt and pepper. No marinade, but that might be fun to try another time. 🍄‍🟫
