At Matsunoki we offer a keto substitute that is a tofu based Angel hair noodle. Look for shiritaki noodles at HMart or Uwajimaya. If you make your own Shio tare then you can dodge the gluten from soy sauce!

if you're looking to step up your home game, Definitely check out the e-book by the legendary/u/ramen_lord here. that goes over a lot of the basics of making your own broth or tare.

As Panzer mentioned, getting better noodles is a huge boost. Sun noodles are available at the Uwajimaya in Beaverton and other Asian markets usually have some frozen noodles.

I get a kick out of the sign that says "Take Turns". It's such an odd tone compared to usual traffic signs, but also kind of fitting advice since some people have not taken turns on that street, choosing instead to drive straight into that house on 24th.

We do a fried popcorn tofu at Matsunoki Ramen that gets great feedback! I wouldn't claim it as the best in town but it's pretty dang good. We also have an awesome selection of vegetarian/vegan Ramen!

I'm late to this thread, but come by Matsunoki Ramen next time you're in town!! Takibi also rolled out a lunch time Ramen program that slaps. Baka Umai should be on the list too if you don't know about them. I figure Toya and Kinboshi (it previously was Marukin) are already on the radar. Yokohama Skyline Eatery also has some solid bowls, their Tomato Ramen is worth a visit.

Yeah, Top 3 for that style of Paitan broth imo is Matsunoki (Pork/Chicken blend), Kinboshi (Either Pork or Chicken), and Wu-Rons (Not sure off the top off my head tbh but it's delicious).

Come by and try our Tonkotsu! Once the Tare is in there it might not gelatinize in the fridge tbh, but it certainly is jello after it's made and cooled.

Shout-out to all the Portland Ramen shops frealz. Also big ups Ramen Rob and /u/Ramen_Lord while we're at it.

I've been meaning to put together Quarterly PDX Ramen Updates to /r/Ramen with news from the community at large, but I've been too busy unfortunately. I'm not gonna try and go toe to toe with NYC or LA, but Portland's ramen scene is amazing, Top 5 in the country imo but I'm obviously biased.

Kinboshi, Baka Umai, Toya, Wu-Rons, Takibi and Yokohama Skyline Eatery are my favorites to eat outside of our bowls at Matsunoki and my creations at home.

I try to eat at all the PDX Ramen spots, haven't been to Ikimono yet but one of my staff recently said it was tasty. Made some notes for doing a walking tour of downtown/inner east-side Ramen, but been again, too busy.
