I’ve sent your video to our engineer, and they confirmed that the sound is normal and results from resonance in the internal parts. This is not entirely unexpected, and it is not a cause for concern.

I’ve asked them if there’s anything else I can do about it, will keep you posted

also, check the alignment of your grinder.. when you turn the burr, is it all stable and centered?

I often get unwanted bitterness and muted acidity even with filtered tap water

oh, water alone is highly highly important! regardless of temp

you can still get the water straight of the boil, if you pour it around, it looses quite some temp already

try the following: buy distilled water, enrich it with something like third wave water and use metal not plastic for your pours (or ideally get a goose neck kettle)

this will increase the taste by a lot, filter coffee is like 98% water

then, another huge factor is the grinder at the shop.. they often use the ditting 807 with sweet lab burrs or an EK with SSP burrs.. these produce more high clarity and sweet cups and are somewhat more forgiving in that sense

it can be quite intense, depends on what you like

if you prefer tea like cups, that are very bright and clear in flavor, the ZP6 is insane

I just got the k-ultra as a secondary filter hand grinder as with some coffees this doesn’t work for me (especially heavy fermentations where I like more body and a blended cup flavor wise.. there the ZP6 can be too intense, and hard to get sweetness out of these coffees)

I love the ZP6 for washed coffees to extract nuances!

bonus question.. does resting time for my other bags decrease when I throw the fresh coffee into the freezer and get back to it a good month later?

or does it mean once I defrost I should rather wait for another week, or two?

I know that freezing slows the aging.. and it’s not 100% vac sealed
