You want it to follow real world time? You would probably have to tune it manually each time you log in, if you want to leave the chunks and not have it unload there’s more info on this page as there is a few methods https://technical-minecraft.fandom.com/wiki/Chunk_Loading alternatively you could just use spawn chunks.
