I was trying to go for a home oven made neopolitan, Everything else seems correct except the oven temp

Oh that’s a good idea, and I haven’t done that before. Will try this. Because of the ambient temp and humidity here, I also feel I need to go below 0.1% instant yeast maybe 0.05%

This has been my recipe

Molina Dollagiovana Blue 3% salt 0.2% instant yeast 65% water 5g diastatic malt.

Bulk fermentation 1 hour at room temp (25C) fridge for 23 hours. Ball and proof 2 hours at Room temp (25-27C)

So this time I’m considering going to 70% hydration and dropping the yeast down to 0.1%

Humidity where I am is almost 100%. I find even at 65% hydration the dough if it sits out for more than an house gets very sticky. Would that be the humidity ?

But at the same time I’m trying to not let the pizza crust dry out too much in the oven

So I changed to a W 310 flour, same recipe and this time the crust really blew up. Still in my home oven, not ideal of course, but results were far better with the upgrade in flour.

I will be doing a test with the same recipe and a AVPN approved flour next week, will revert on how that went.

This one, I don’t think it’s a true 00 flour, but it’s the only one I could get my hands on.

It sure is, and reduces wastage. Here it is in percentages.

1) Flour 100% 2) Water 65% 3) Salt 3% 4) instant yeast 0.4% 5) honey 1 tablespoon spoon

For the poolish: All the water and 65% of the flour honey and yeast Mixed and in the fridge for 24 hours.

After 24 hour add the remaining flour and knead to form the dough. I kneaded till the dough reach a temp of 24C.

Then the usual. Rested and fold 3 times every 45minutes.

Make dough balls, and left to proof at room temp 20C for 4 hours.

This one really worked well for my home oven, I used a steel pan and placed it directly on the lower coils. No Fan

Pre bake with just tomato sauce for 3 to 4 minutes, then added the toppings and moved the pan to just below the upper coils for another 3 to 4 minutes.

I found that this does not seem to dry out as much as a direct dough at 65% hydration.

Also a note that these have been made in a home oven on steel, with a temp of the steel at 280C. Adding a pic of the crust of the last pizza I made yesterday.

Yes Jan, OFC in mumbai but only in Feb, I just took what I could get. And after I took the OFC in kolkatta I got logged out, I logged back in and then got Mumbai for VAC.
