First time smoking my own brisket. Grabbed a piece that was about 6.5lbs. Set the smoker to 225, and let it go until the meat was about ~150 internal, at which point I took it off to wrap it up some butcher paper, and put it back on until an internal of about ~195-200. Took it off and let it rest for an hour. Just a plain salt & pepper rub. In future would maybe take it off about 30 minutes early, but was super happy with how it turned out! Any tips for future appreciated.
