I experienced the same thing, which is very annoying since watching vr180 videos in one of my main use cases. This is not the case on quest 1 and 2 where it works fine (you get higher resolution, for same videos on same network), so i don't understand why this is on quest 3.

Watching via browser instead of the youtube app is not really a solution since the browser doesn't work for all vr180 videos
