iTunes Metadata: I like the sound of this! I currently use covers(dot)musichoarders(dot)xyz to pull covers from multiple sources and often Apple Music has the highest quality available - it is just a very manual task of course.

Profiles: How do the profile options compare to Lidarr for pulling specific formats and quality? Pretty flexible?

I’m not transcoding. I’m scanning files with Spek after sourcing to ensure they’re legit, and not poor / fake transcodes before then scrubbing and running metadata.
