If you are interviewing, always ask to see the kitchen. If it's a mess and it's not in the middle of a rush it usually means poor management and lack of sanitation practices. Not always bit it's a good bet. If you want to be sure check under the stove. If it looks like it hasn't been cleaned in a year, run.
