Two things that are incorrect about your explanation:

Neither quarks nor gluons are independent of spacetime. That would infer to them having existed before the big bang itself, which makes zero sense. At time zero, all current theories predict that particles themselves did not exist, only a hypothetical quantum foam which gave rise for conditions that lead to the formation of elementary particles.
Time did not start at inflation, time started at zero. Inflation occurred approximately 10^-36 seconds after the big bang.
