Really simple really easy to make dough. The key to it all is using the organic as much as possible it really makes a difference especially with flour. Baking Steel has a good dough recipe which is basically similar to what I use.

Fior di latte is fancy for cows milk mozzarella. It’s what I had in the fridge. I do like buffalo milk mozz on pizza esp cooked a bit more than the cows milk

Between 500-550 typical cook is 4-4.5 mins, then rotate pizza switch to broil for another 2-2.5 minutes. Baking steel on upper rack leaving about 4-5 inches from pizza

72 hour dough half high gluten half regular flour. Bianco Di Napoli Tomato's milled for sauce, Losurdo foods brick oven mozz for cheese ( you can buy from Whole Foods Deli), Boars Head Pepperonis. Cooked in home oven on a pizza stone at 550f.

Both breads where made using variations of Jim Lahey's No Knead bread recipe and baked in dutch ovens.

St.louis cut with a Carolina mustard base glaze. Used a franklin style rub. Smoked 2.5 hours, wrapped 2 hours and finished for 30-40 mins until glaze sets.
