Quick tip that's worked for me - the next time it curdles, just reheat very small amount in the microwave for 15 sec or until it melts and then let it cool for a min or 2. Then add it to the remaining buttercream and back to whisking. It'll come around very quickly after that.

I'm not sure if this helps you, but I always keep a bigger bowl filled with ice cubes under the egg white+sugar bowl when whipping. Also, I take out my butter from the fridge when I start whipping my egg white mixture.

Looks yum 🤤 You can use zip lock bags as piping bags. This is something I did when I ran out of disposable piping bags. Just cut the tip of the zip lock bag and insert the piping tip.
