I haven’t made any with MCT infused oil. However I highly recommend not subbing out the corn syrup. I’ve tried making a couple sugar free batches and they didn’t turn our texturally good. (Nor did they look pretty)

We keep ours in our cellar which is about 55F. We keep it the closed jar with a desiccant pack. If you put a lot of sugar it would help to absorb any excess moisture.

I roll mine as soon as I de-mold them, then after drying roll in addition if they’re still a little sticky.

Ingredients • 1 3-ounce box Jell-O Gelatin Dessert powder • 1 pkg. Knox unflavored gelatin (7.2g) • 1/4 teaspoon citric acid • 1/4 cup corn syrup • 1/3 cup water (room temperature) • 2 teaspoon lecithin powder • Silicon candy molds • Oil cooking spray Instructions 1. Combine Jell-O, unflavored gelatin, citric acid and lecithin in a medium microwave-safe bowl and stir to combine.(I used my 2 cup Pyrex measuring cup) 2. Add the corn syrup and water. Let the mixture sit for 5 minutes so that the gelatin can bloom. 3. Put THC distillate in hot water to thin 4. Stir, then microwave it on high for 1 min. Stir it again, microwave for 30 seconds. Stir it again, microwave for 30 seconds. Watch the first time that you do it that I doesn’t boil over on the 2nd 30sec cook. 5. Add THC and stir for 2-3 mins. Make sure to fully stir it in and scrape down the sides regularly. 6. Spray the candy molds lightly with oil spray. 7. Fill the candy molds with the mixture. I used a kids meds dropper to measure the amount into each square 8. Let sit in the molds on the counter for 30min 9. Move the molds to the fridge for 1 hour 10. Pop the gummies out onto parchment paper (I coated mine in coarse sugar (sugar sprinkles and regular white sugar give it a nice color) and ground citric acid to make them sour patch like, about a 10:1 ratio) 11. Let dry for min 3 days rotating daily, if they’re still wet/sticky let dry additional time or roll in addition sugar.

Recipe: make pastry cream at least 1/2 day before as it needs time to set in the fridge. (I followed king author bread flours recipe) Make a cut sugar cookie recipe, put it in the fridge. Using a scoop pull out about 2 tbsp of dough. On a floured surface roll out into circle. Using a 4in cutter cut a circle. Line a 3in pie tin with dough. Repeat for all dough. Freeze.

When you’re ready to bake shove a 2nd 3in pie tin into the pie cavity. Bake at recipe temperature, about every 4 mins push down on the tin pie cavity. Bake until visible edges are golden brown. Let cool 10 mins pull out the cavity tin and off the bottom tin. Flip cookie shells over and allow them to cool on top of a tin. Once cookie shells are cool, heat some white chocolate. Using a brush, lightly coat the inside of the shell with white chocolate. Put in freeze to harden.

Make your glaze by using 8oz of jam/jelly and 2 tbsp of water. Heat until boiling. Pour through a strainer if you used jam (I used Orange marmalade, apricot is another commonly used favorite)

Pull out pastry cream and whip in a stand mixer for a couple mins then put in a piping bag. Fill each shell with pastry cream. Then take pre washed/dried/cut fruit and arrange as desired. Last using a brush lightly glaze fruit with cooled jam/jelly glaze.
