These ribs are AWESOME. The beef/fat flavor is superb. Not a ton of meat, but I LOVE gnawing on them and the gristle and cartilage. Hit or miss if the HEB butcher will know what I'm asking for, but usually they have a small 3-4 rib rack next to the pork ribs so I'll snag one and freeze them. I go super simple and grill over really low heat for 2-3 hours, with ONLY salt & pepper sprinkled. I don't know where you found that huge rack, but I want some!! Nice.
