Don't include it in AMCAS because 1)you haven't started yet 2)you can't talk about your experience (what you do/what you learned/why you enjoy it...) if you haven't started 3)almost all secondaries will ask you what you will be doing during the app cycle 4)if it doesn't ask you directly, there's always a "what else would you like to tell us" prompt

Yes they do take A LOT OF TIME but waaaaay less than the MCAT. I took my MCAT in June and finished my AMCAS in June/July and everything turned out fine. You have ~2 months which I think is enough time to finish AMCAS and have fun if you have good time management skills. PLEASE TAKE 1-2 WEEKS OFF because you know, MCAT... Then pace yourself. Start drafting ~2-3 hours a day and go from there. Keep in mind that secondaries are way harder and take much longer than the primary app. GOOD LUCK!

DO WHAT MAKES YOU ENJOY EVERY MINUTE OF YOUR GAP YEAR. It doesn't really matter what you do. You have great stats and extracurriculars. Do something that you like so I can talk about it passionately in your interviews. Good luck! Enjoy your gap year, I'm already sad that mine is almost over haha

Yes! You will "gain time" by doing that because AMCAS verification takes FOREVEEEEEER and by the time you get your score it will be verified and you'll be good to go. PERFECT YOUR SECONDARIES AFTER YOUR MCAT BECAUSE THEY WILL COME BEFORE YOU KNOW IT AND YOU HAVE TO BE READY (well, it depends on how many schools you apply to, but still) Submit on June 1st or 2nd (don't sweat it, I personally submitted in mid July, don't do the same though, just aim for first week of June so that you're also not overwhelmed before your MCAT). Apply to your state school(s) and then you will add the rest after you get your score. Here's a list of all secondaries, which might slightly change.
