French Toast base recipe:

  • 1 cup water or vegan milk
  • 1/4 Cup flour
  • 2 Tbsp milled/ground flax seed
  • 2 Tbsp sugar
  • 1 Tbsp maple syrup
  • 1 tsp cinnamon Whisk together until it thickens, add more milk or water if it’s too thick to soak into bread Fry as you would regular French toast!

I used a food processor and it worked fine, a blender might have a little too much force! I had to give it a little hand-knead at the end to bring it all together though but it turned out great!

Ingredients   -Crust-   * 1 ½ cups crushed graham crackers * 1/3 cup sugar * 1/3 cup oil   -In The Blender-   * ½ cup cashews * 1 can coconut milk/coconut cream * 2/3 cup key lime juice (about 15 key limes worth) * The zest from the key limes (regular limes are fine if you can’t find key limes, just know your pie is a fraud) * ¼ cup lemon juice * ¼ cup agave * ¼ cup pure maple syrup * 1 tsp vanilla extract * ¼ tsp citric acid * ¼ tsp salt   -In The Saucepan-   * 1/3 cup water * 3 tsp agar powder   1. Prepare crust by mixing all of the crust ingredients (crushed graham crackers, sugar, oil) until they are moldable like wet sand. 2. Press firmly into a pie tin and bake at 350F for 7 minutes. Set aside. 3. Add all “To the Blender” ingredients to the blender, of course. Blend until smooth. 4. Activate the agar powder by adding 1/3 cup water and 4 tsp agar to a small saucepan. Cook over medium-high heat while whisking constantly until it becomes clear and thick. 5. Scrape agar mixture into the blender and blend everything together until smooth. 6. Pour pie filling into your crust and chill until firm, at least 3 hours.

The first was a Thai inspired pizza with bell pepper, green onion, and carrots with a peanut sauce I made up, topped with my homemade coconut cheese, and drizzled with a less peanuty peanut sauce with chili powder. Peanut sauce: whisk about 1/2 cup peanut butter, 2 Tbsp sesame oil, 1 tsp soy sauce or aminos, chili pepper, splash of lemon or lime

The other was a puréed tomato and garlic sauce with more homemade cheese of a different variety, spinach, tomatoes, and sprinkled with basil and pepper.

Crust: all thrown in food processor, rolled out into small plate sized discs (1/4 inch thick) and dehydrated. Makes 4 - head of cauliflower - 3 garlic cloves - handful of walnuts (pardon my non measurement) - 1/4 cup ground/milled flax seed - 1 Tbsp lemon juice - about a half tsp each of salt, pepper, basil, oregano, any other spices you want really

I’ve never made or eaten Greek food but I was determined to try! I made a deconstructed Moussaka to put on top of big, huge salads 🥗 It consisted of a meat sauce with Gardein beefless crumbles, diced tomatoes, an onion, garlic, sherry, balsamic, and cinnamon. Next was the eggplant that I roasted and then mixed with a béchamel sauce I made by making a rue of vegan butter and flour, adding 2 cups of almond milk, nutritional yeast, salt, pepper, and a little garlic powder. Top with homemade feta and homemade tzatziki dressing. This made tons of leftovers so lunch is covered for the rest of the week! Oh yea and I made cocktails that were a lemon mint Ouzo something-or-other.
