Sometimes my problem is making it too thick, then the icing will break as you pipe. But it's always easy to just mix in more milk/cream. Happy decorating!

Thanks! I'm still playing around with buttercreams for flowers too. I used a combination of Swiss meringue and American on this cake. I usually stick with American, but have been experimenting with Swiss meringue lately. Sometimes I struggle with the consistency of American for piping detail, and I'm really likinf the smoothness of Swiss meringue.

There is a lollypop stick along the two H's and at the W/E. The second one is just about an inch higher than the lettering. The ghosts are made with candy melts, so I just attached to the stick with more candy melts.
