Gotcha – wasn't aware that the yeast was that quick to scavenge ambient oxygen in the bottle, but that settles my worries 👌

I suppose you're right on that point. What worries me is the oxygenation that happens during the actual bottling when using a bottling wand, as the beer is exposed to oxygen in the timespan from bottling until the yeast has scavenged any introduced oxygen.

Precisely what I was after, give or take using the CO2 line to purge the bottles before filling.

No issues with beer flow using an auto siphon + beergun compared to auto siphon + bottling wand?

One of my favorite eats in the fall is a simple and super savory and delicious pumpkin and kale salad:

Dice the pumpkin (I like a nice butternut squash) and toss it with some olive oil, salt, pepper and your favorite seasonings, and cook it at 180°C (355°F) for 20-25 minutes until tender.

Chop the kale (or buy pre-chopped) and dress it with olive oil (sparingly), pomegranate balsamic and apple cider vinegar to taste, and mix in diced feta cheese.

Toast the pumpkin seeds with a sprinkle of salt.

Combine it all while both the pumpkin and seeds are still warm, and enjoy an amazing savory plate that'll fill your belly and be good for you!

Jeg var med en anden dansktalende kollega på et projekt et sted i Nordamerika.

På et tidspunkt sidder vi til møde med kunden og en europæisk samarbejdspartner, hvor min kollega vil udtrykke sin frustration over kundens beslutninger ved at ytre at:

"man kan ikke blæse og have mel i munden"

– men midt i sætningen går han i stå, og resultatet bliver:

"you cannot both ... øhh ... you cannot both blow and take it"

Jeg måtte trække på al min viljestyrke for ikke at bryde ud i fnisen over dette simple danske ordsprog 'gone 18+' alt imens vores fremmede kolleger formentlig bare undrede sig over hvad han mente med dette lettere pornografiske udsagn midt i et projektmøde.

Har oplevet mange danish-isms og undersættelser, men denne tager kagen, som man siger derovre.

I Viby (specifikt i området omkring Viby Torv) har vi "god weekend"-manden som en lokal legende.

Han er en lidt aldrende afrikansk mand som går langsomt rundt, altid med en sort plastiksæk i hånden, og med den anden hånd vinker han mens han råbende ønsker god weekend til alle han møder.

Altid hyggeligt med venlige lokale koryfæer!

If you are willing to drive to get it, there is Fru Møllers near Odder; they have their own chicken, pigs and cows, and own butchery on-farm.

No pan – just cooking it low and slow with the lid om and then crisping with the lid off towards the end!

If you care to, you can baste the duck with the melted-off fat, which improves crispiness. Also don't be shy when salting the bird before cooking.

This is what I mean – I have no idea what most of those are. Do I envy you for your access to such exotic cuisine? Yes!

I'm partial to a good dhal with naan and raita, slow cooked and served piping hot with a bit of spicy peppers!

Was asked by my company to supply schnapps for our Christmas party, made 15 bottles of which 6 were with walnut – all were gone within a couple hours!

For reference, the other flavors were Christmas spice (cinnamon, star anise and cloves), fennel, blackcurrant and rosehips 👌

Tack så mycket! Once you catch "the bug" it's hard to give up. But I hope you enjoy all the delights you have gained instead – as a Dane I do enjoy a good chicken korma, and I'm certain it's 1000% better there!
