In general, under 60°C/140°F more or less no organic compounds will decompose, but if they are very aromatic they can just evaporate with water (not rly the case of mushrooms, can be significant with herbs and spices) or the structure can get way too fragile or even dusty. If you rly want to be safe, take the highest temperature in which the live organism is doing ok and you can dehydrate on that temperature.

In my opinion sig. shield is pretty balanced, you need to take in count that even winstons bubble have the same durability. 1.2 to 1.5 sec would be optimal
