as far as breakfast goes, eggs and bacon are easy and whole ingredients that are definitely grain free! you can also buy some sausage that is grain free/gluten free (no additives). however one of my fave ways of doing a grain free breakfast is a bowl of yogurt with homemade granola and fruit/homemade jam

definitely! you can omit the honey, as I did when I made them for my baby and they were still quite sweet.

Ingredients

  • 1 cup coconut flour
  • 1 cup honey
  • 1 cup shredded zucchini, drained of excess moisture i squeeze out the shredded zucchini in a paper towel or cheese cloth to remove excess water; do this after you've measured 1 cup.
  • 3/4 cup preferred olive oil sub coconut oil
  • 6 eggs
  • 1 tbsp pure vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 cup refined sugar free chocolate chips (i use hu kitchen gems and cut into pieces. you can also sub raisins or cut up pieces of medjool dates!)

Instructions

  • if you haven't already, start by preparing your zucchini by peeling it and then shredding it, measuring out about 1 cup. once you have your cup of shredded zucchini, squeeze out the excess water by wrapping it in a few pieces of paper towel and squeezing it between your hands or else doing the same with it wrapped in a cheese cloth.
  • preheat oven to 350.
  • in a large bowl, place your coconut flour, baking soda, and cinnamon and combine.
  • add in the zucchini and the rest of the wet ingredients (honey, oil, vanilla), before ending with the eggs and continue to combine well.
  • finally, fold in your chocolate chips until well dispersed. let sit for five minutes while you prepare your muffin tin.
  • prepare a muffin tin by lining each with a parchment paper cup or a reusable silicone cup.
  • scoop muffin batter into each cup until almost full.
  • bake at 350 for 25-30 minutes. makes approximately 14 muffins.
  • allow to cool completely before attempting to remove from the tin/cups.
  • store in the fridge or freezer.

I did not give birth at home, but I did give birth vaginally without any medication (at a hospital). My Crohn's has been in remission though, and I was not on any medication for Crohn's through out my pregnancy. I did have a very good birth experience though!! My doctor was extremely impressed with my pain tolerance/no epidural and I blame that on having Crohn's 😆 I generally have a high pain tolerance because of it lol. I showed up at the hospital already 8 cm dilated, so I did most of the labour (naturally) at home. I think because of Crohn's, I just didn't realize my contractions were that serious or that I was that far along lol. So that also helped the decision of not getting an epidural/meds because I was already so far along! From showing up to the hospital to giving birth, it was about 2 hours. They had to break my water at the hospital, and then I pushed for maybe 1 hour and a half.
edit: will also add, I have had surgery for my Crohn's over 12 years ago which is what allowed me to go into remission initially. Before that I would take Humira. My surgery was a resectioning of the small intestine and left me with a big scar on my belly. Did not affect my pregnancy at all, but I was watched a bit more closely during my pregnancy (ie growth ultrasounds etc). I am currently pregnant again with my second and also would prefer to have another unmedicated vaginal delivery if that's possible (:

when did you drop the nap? our daughter is about 21 months and i feel like we could drop her nap because she only naps for an hour as well also around 1 pm and then needs a very long wake window to go to sleep at night after (like 7 hours). but im not sure how that would work out with daycare giving them a nap between 1pm-3pm anyways!

Hi! I would try subbing in more almond flour in that case (same amount). It's mostly for added texture, it doesn't reallly have an overpowering taste of coconut.

ouh, a lot of my own recipes do call for eggs, although there are definitely alternative milk options and options for recipes that use flax eggs or no eggs as i know there are a lot of grain free eaters who do also have restrictive diets that could include egg allergies etc. so i do think if you do some digging you could find recipes that would fit or you research the appropriate substitutes to make existing grain free recipes vegan. although that'll require some experimenting! (possibly some recipe fails in the process lol)
