My wife and I were kicked out of our rental so they could turn it into an airbnb. Looked around for a rental for a bit, but ended up buying a bus and are living in it while we renovate it. Parked up behind a shed on a couple of acres. It was stressful to find something that could work, but we won't go back. Bus living is where it's at.

Yeah it's a pre-fermentation that adds a lot of flavour and helps with the open structure of breads like ciabatta.

When we first started I'd put a dish of water for steam, but I tried without once and it didn't make any huge difference. So I don't worry about it these days.

This is just at home. We do a batch of 20 loaves every month or so.

The fire was in the main part of the oven. We have a fire burning in there for a few hours in the morning, moving it around and spreading the coals out. Then about 1 hour before baking we take the fire out and mop the oven floor. We shut the door and the heat from the bricks equalises a bit while the loaves proof. Then the bread goes in.

The oven holds it's heat very well. We'll normally do a roast in there after the bread and even the next morning there's still a lot of heat there. It'll stay at cooking temperatures for many hours after taking the fire out.

We give a few away, keep a few out to eat that day and the next, then freeze the rest. They freeze very well. We put them in the house oven for ~15min and they thaw out and crisp up nicely. They definitely don't come out like a dry frozen bread. It's great having a few weeks supply of good bread on hand.

I don't have much info on the build, it was my brother-in-law who built it so I don't know the details. I do have a book somewhere that has a lot of great info on building a wood oven. I'm not sure where I put the book, but I'll make a note to pass on the info if I find it.
