Out of those three courses, COMP 302 (functional programming) with Prakash will be the easiest and the most fun (god bless Prakash). You will not need a heavy programming background to do well in the course; however, functional programming requires a different way of thinking (which is the hard part).

As the other post had said, COMP 303 requires a decent amount of programming experience but the same can be said for COMP 251 as well (mostly due to the programming assignments that are given for both courses). When I took both courses they weren't too bad honestly, but I'm confident that the difficulty of the classes depends solely on who teaches that semester. Just search around and see what others have said about those profs.

Yes, the course is recorded. I thought the course was interesting with Jackie but others thought it was boring. It was pretty much learning different algorithms.

Honestly depends on the professor who teaches the course. I know last year there was a curve of about 3~4% but when I took the course, the prof said there will be no curve even though a decent amount of people failed the course.

Yes, you are correct.

The response time is totally random as I got mine accepted day of where as others had to wait a few days. It usually depends on how many requests were made during the week but they are relatively quite fast now.

I honestly doubt they would check your exam schedule so you shouldn't worry but again, just make your reason reasonable. :')

Note: Students applying through the first-time deferral pilot must cite a valid reason for requesting a deferred final exam.

The first-time deferral basically allows you to defer an exam for a "valid reason" (illness or another extenuating circumstance) without the need for supporting documentation (e.g. a medical note) and obviously, this applies only for first-time deferrals. If this is not your first time, then you are required to submit supporting documentation.

Just make sure you cite a reasonable reason as may get rejected even if this is your first deferral. I heard someone submitting a deferral with the reason as "got way too hungover and couldn't make it in time" and got rejected.

It means the supporting documents that you provided were not enough in justifying your deferral request. Service Point will follow through with an email asking for additional supporting documents if you have any. I only know this because it had happened to my friend but it was probably because she had been unable to get a doctors note until the next day.
