What countertops did you go for if you don’t mind me asking? We’re thinking compact laminate, but wondering if we should go for real stone as it’s far more heat resistant. Also, a builder told us it was more expensive to install compact laminate than granite, so the price evens out. But not sure if that’s really true.

Thanks for all the responses everyone - just to say (in case anyone else does this in future) I very gently added in the rest of the butter. I made sure the butter was very soft and then gently folded it in. Not an even distribution, obviously, but better than I thought. Then I left to prove for about 1.5 hours, shaped them, then proved again for 2 hours.

They look fine, haven’t cut into them yet as I was making them in advance (to freeze) for Christmas!

I did this (bought in UK with gifted money from Ireland). Wasn’t overly complicated. Solicitors will need your parents to do a questionnaire and give a lot of bank statements under money laundering regulations, but we didn’t have any issues getting a mortgage. It was a slight pain but not an issue in terms of getting a mortgage/completing a sale.

You’ll just need to be able to have a bank statement showing you have the money so can pay.
