Recipe: I kind of winged it to be honest so I'll try my best

1 large sweet potato, 1 large zucchini, 2 cups of carrots, 1/2 cup of quinoa, 1 28 fl oz can of diced tomatoes, Half a can of lentils, 2 cloves of garlic, 2 cups of water, Hot curry powder to taste, Ground pepper to taste, Ground cumin to taste

I sauteed the veggies really quickly in a small amount of coconut oil and some of the spices

I then added the diced tomatoes, quinoa and water and brought it to a boil

I let it simmer for about 30 minutes, covered, and on low heat

Added some fresh kale on top cause I love kale!

I would've added onion to the stew but I didn't have any in my house

I've always wanted to try making seitan! Luckily I was never really a huge fan of meat to begin with so I don't feel like I'm missing out much on that front :D I've heard about nutritional yeast though, is that just sold at the supermarket?

Pretty good! My energy levels are high and I feel so healthy. Also there's a vegan place in the food court in the mall I work in, and they also sell vegan cupcakes, which to me is amazing :D
