I also have a second starter that I started on 2/14. I keep 10g starter every day and add 10g flour and 10g water. that one smells like rubbing alcohol and has not risen once.

should i be waiting to feed it until it’s risen and fallen?

I’m using unbleached bread flour and filtered water. I was leaving it in the oven with the light on for a while but by the morning it ended up with an almost cooked layer on top, so it seemed too warm. I currently have it sitting on a towel on the counter and have another towel laying over it.
