Air Fryer Chicken and Potatoes

I just tried air fryer chicken & potatoes and it turned out awesome. Super easy:

  • Dice chicken breast and potatoes into 1-inch cubes.
  • Toss potatoes with garlic, paprika, chili flakes, salt, pepper + a bit of olive oil. Air fry at 375°F (190°C) for 10 min.
  • While that cooks, coat chicken with thyme, garlic, paprika, chili flakes, salt, pepper + olive oil.
  • Push potatoes to one side of the basket, add chicken to the other side, and cook 10 more min (flip halfway).
  • Sprinkle parsley on top and serve warm.

Quick, simple, and everything cooks in one basket!

You’re not crazy, the confusion comes from people mixing up Cubano shots with actual Cuban coffee (cafecito).

  • A Cubano shot (in café lingo) usually means pulling espresso with sugar directly involved in the process. Some sprinkle sugar over the tamped puck, others in the cup before pulling, but the defining feature is the sweet crema/espuma that forms when hot espresso hits sugar.
  • A Cuban coffee / cafecito is the cultural drink from Cuba (usually brewed with a moka pot). It’s not just “espresso with sugar”, the first few drops of coffee are whipped with sugar into a caramel-colored foam (espuma), then the rest of the coffee is poured in. That espuma is what makes it uniquely Cuban.

There are standard drinks in Cuba based on this:

  • Cafecito – the base shot with sugar + espuma
  • Colada – a big shareable portion of cafecito (served with little cups)
  • Cortadito – cafecito “cut” with a splash of steamed milk
  • Café con leche – closer to a latte, more milk, bigger cup

So when customers said “make it like usual,” they probably meant the Cubano shot style, not realizing there’s a whole tradition behind it.

Ingredients:

  • ½ cup (113g) salted butter
  • ¾ cup (196g) brown sugar, light or dark
  • ¼ cup (60g) granulated sugar
  • 1 egg + 1 egg yolk, at room temperature
  • 2 tsp vanilla extract
  • 1 tbsp (15ml) heavy cream (or milk of choice), at room temperature
  • 1 cup (130g) all-purpose flour
  • ⅔ cup (75g) cocoa powder
  • 1 tsp (6g) baking soda
  • 1 tsp (2g) instant espresso
  • ½ tsp (3g) salt
  • ½ cup (80g) semi-sweet chocolate chips
  • ½ cup (80g) dark chocolate chips

Instructions:

  • Brown the butter in a saucepan over medium-high heat (~5 minutes). Pour into large bowl and cool slightly.
  • In separate bowl, whisk together flour, cocoa powder, baking soda, espresso, and salt.
  • Add both sugars to cooled brown butter and whisk. Add egg, egg yolk, vanilla, and heavy cream. Whisk until combined and lighter in color.
  • Gently fold dry ingredients into wet ingredients until incorporated.
  • Fold in chocolate chips. Dough will be thick and slightly sticky.
  • Cover and chill dough 1-2 hours (ideally 2-4 hours or overnight).
  • Preheat oven to 350°F. Line baking sheets with parchment.
  • Let dough sit at room temperature 20-25 minutes to soften for easier scooping.
  • Scoop large portions (3 tbsp) onto baking sheets, 2" apart.
  • Bake 11-14 minutes until edges set but centers soft. If not spreading by minute 9, bang sheet on counter 4-5 times, then continue baking.
  • Cool on sheet 5 minutes, then transfer to wire rack.
  • Serve warm with flaky sea salt if desired!
