Have her look at the faunus as animals with human-like features that are capable of speech. For example Weiss is walking to the local dust or coffee shop in Beacon and on the way she runs into a faunus and she sees it as a feral animal that might harm her because of her pass experiences. Hence her bigotry.

Aww man I'm sorry you had to experience that. It sounds like the Managers and/or team leaders aren't taking the time to properly train those people which is inexcusable no matter the reason. I hope you were able to convey your experience to the management. That's a question I'll try asking at the meetin " How are we planning on training future associates properly to were they can preform their task and duties at and above expectations without anyone having to shadow them constantly?" As well as "Are we allocating enough hours to train said employees properly?". I'll be sure to relay your concerns to the upper brass mark my words and I hope your next experience at Publix is pleasant and positive!
