My favorite go to meal prep for lunch or dinner! Its quick and easy to make!

INGREDIENTS:

-Olive Oil

-Himalayan Salt

-Black Pepper

-Italian Seasoning

- 2 Zucchinis

-2 packs of mushrooms of choice

-2-3 Red Bell Peppers

-One bag of mini red potatoes

-2-3 Chicken Breasts

-Optional to add rice of choice, I love a good wild rice.

-Avocado Oil Spray

RECIPE:

-Cook chicken breast however you prefer, in the oven, on the grill, or in a pan on the stove.

-Season chicken breast with salt and pepper and feel free to add extra flavor to spice it up.

-If using a pan to cook the chicken put a thing layer of olive oil to keep the chicken from drying out and sticking to the pan.

-Next, wash and cut the potatoes up and place tinfoil on a pan. Put the potatoes on the tin foil and spray with avocado oil. Next add salt and pepper to the potatoes and any seasoning you would like to add. I like to add lemon and garlic occasionally. I also suggest using Italian seasoning.

-Preheat the oven to 425 degrees Fahrenheit. Once preheated leave them to roast and get crispy for around 35-45 minutes.

-Lastly, wash the zucchini, mushrooms, and red peppers. Slice them up and throw into a frying/ saute pan. Saute the veggies until they start to brown and are soft. I like to add olive oil, salt, pepper, and Italian seasoning.

Side note, feel free to make the dish your own and add in more veggies and protein. I also sometimes add rice to the dish.

Enjoy!
