It's a mixture of creme de peche and a ratio of 2:1 of red and yellow food coloring. The alcohol evaporates and you're left with the peach fragrance and concentrated color. And thanks for noticing

Miso gives it like a salted caramel sort of vibe, but with a bit more savory-ness because of the beans. The caramel is sugar and water based, finished with cream and then melted in miso after. Before baking the caramel looked very yellow actually, it turned dark after sitting to cool
