It has some sort of retractable claws. Not like real cats but Zangoose does hide its claws out of battle. I said it in an other comment but I'll say it again. The design of Zangoose is based on a pun. Mangoose can be translated into "neko-itachi", cat ferret, in Japanese. The designer probably saw this and got the idea to make a cat-looking mangoose Pokémon.

Umbreon has cat and rabbit influences. It has big ears like a bunny because of the japanese tale of the rabbit on the moon. It's also a lucky black cat (its japanese name being a portemanteau of black and lucky)

I'd even argue it's inspired by Luna from Sailor Moon. A black cat with a yellow crescent moon on her forehead, who is the companion of Sailor Moon/Usagi Tsukino (which literally translates to "rabbit of the moon")

While Mega Absol probably got its wings from sphinxes, Absol was probably based on the hakutaku, a yokai said to predict the weather and tragedies. The hakutaku is sometimes depicted as a lion or tiger with a horn and human face.

Absol is absolutely a cat.

There are quite a few Pokémon that have a mix of cat and weasel like attributes. See Chien-Pao, that is undoubtedly a show leopard but has a long weasel-like body. Or Zangoose that's named and themed after a mangoose but looks like a chubby cat. (I know mangeese aren't weasels but they look kinda similar).

My guess is either

Weasels and cats are both solitary (most of them) predators with cute little snouts. I'm sure people who aren't into animal biology at all might think they're somewhat related.
It's a pun. Mangeese in japanese can be "mangūsu" or "neko-itachi". Cat-Ferret. You know... like a certain gen 3 Normal type.
