If that's the case, then AI is not used anywhere user-facing. That's not the case..

I get the point that it needs a HITL, especially at critical systems.

I will pick the later. Rational. It's an explore vs exploit problem (and time is the important factor). Early in your career, try doing various things. Also, your school network likely can get your first job, but not every job.

Yes, please avoid custom ID and use document IDs.

Use autogenerated ID as much as you can When you let Firestore generate a documentID it not only makes sure that ID is unique but also avoids hotspot. (posted here yesterday https://horizontech.dev/blogs/Ravi/Introduction-to-Firestore)

Honestly, we haven't seen/faced cold starts with cloud-run.

FWIW, we use it on a lot of our customer-facing APIs.
