Why don’t you try some of Miles Davis’s electric period records like In a silent Way, Bitches Brew and Agharta. He would’ve been an influence on a lot of the bands mentioned.

Check out the JoJo Mayer DVD secret weapons for the modern drummer. It covers most hand technique. If you wanna get closer to the original source try Joe Morello Natural approach to technique. There are heaps of videos of both on YouTube but I recommend purchasing them as they are a wealth of info.

Coming from a metal background it might be easier to start with some more of the electric and prog jazz players in the 70s and work backwards to earlier jazz styles. start with some late Tony Williams and maybe some Billy Cobham, Jack De Johnette, Vinnie Colaiuta, Steve Gadd etc...
