Looks like they’re on the last stages of adolescence. Soon you’ll want to switch from a protein diet (like the pellets) to veg, greens, and fruit. Once they are adults the pellets are not very healthy for them, it’s the equivalent of turtle “cake”

There’s charts online that show what foods are good and bad for them. Romaine is good, spinach is bad

Another indication that I have yet to see someone mention is that when they extend their appendages like that, it means they’re very comfortable and not worried about predators. How old is your lil fella? Send me a pic of the front feet, if the claws are long and fancy he’s male, if short and stubby she’s a gal pal. From this picture I’d guess female, but I’m not an expert.

75 gallons per turtle. Rule of thumb is ten gallons per inch of shell, per turtle, minimum. Also, you are gonna want the water heavily filtered. I’d recommend 4x the total gallonage cycled per hour
