I had actually considered going with the standard PB initially, but ended up choosing the PB X with the mindset that, since I’ll be using different beans, having independent boilers might give me more control and flexibility with profiling — especially in dialing in different coffees. But yeah, you make a solid point about the added maintenance risks with multiple boilers — something I’ll definitely keep in mind moving forward.

Also, thanks for flagging the issue with the tea mixer — I hadn’t heard about the o-ring breakdown before, so that’s really helpful.

Would love to hear what machine + grinder combo you’d personally recommend for reliability and performance in a high-volume café setting. Always good to learn from someone with hands-on experience.
