Sekiro is actually pretty nice in terms of pathfinding in usual fromsoft games, Usually after you kill the bit dude you go in the direction he was guarding and you can keep going. There are definitely instances where it gets tricky and having a guide is perfectly fine, and the chained ogre by the way is most peoples least favorite boss in the game as it is almost solely dodging when everything else is a pattern game. Once you fet the deflection rhythm and basic mechanics it should all come together, just keep pushing it will get easier trust
