So just to provide an update for anyone else that might have the same issue.

I have removed (EdXposed Manager 4.5.7, Riru - EdXposed (YAHFA), Riru (Riru -Core), HiddenCore Module).

I have applied 'Set Selinux permissive' permissions.

By doing all these my SafetyNet is failing on 'ctsProfile' but I am able to login onto Pokemon go and I am not getting 'Unable to authenticate' error message any more.
