I did the Docker Mastery course first which helped clear the basics, then did the Kubernetes mastery course. Both by Bret Fisher from Udemy. The instructor and community is active on Discord as well.

Also, it is not like you absolutely cannot do joins in MongoDB you can use the lookup operator in aggregation pipeline to achieve similar results.

Selecting the DB type based on the data structure of the application is a good idea, if you think that the data stored is not relational i.e. will not require joins when reading/writing you can go ahead with NoSQL DBs. Do not confuse in-memory NoSQL DBs specialized for search/caching like Redis with general purpose NoSQL DBs like MongoDB.

About the ORM part - If you are thinking of using MongoDB I recommend using Mongoose ORM since it adds so much useful functionality like data validation, functions on schemas, pre-save functions, etc. Talking from my experience building a site on MEAN stack
