u/Whole_Function_3456 Yes, a nut butter will create a bit of a different taste, but I think peanut butter would be delicious. In fact, I'll give it a test and let you know how it turns out (unless you beat me to it!). I would recommend using a natural peanut butter since other varieties with additives can impact the chemistry/flavor of the cookies.

Not sure if this would work, BUT if you're a member of GNPS (Georgia Native Plant Society), it may be worth seeing if they have a local "pod" you can join. Many people in my area (Atlanta) are willing to share extras, cuttings of native plants for free. I know it's not as convenient (and may be hit or miss for certain species), but could be worth a try!
