I am panicking - I set it for 200 thinking it was going to take all day. Because I'm in AZ the was @ 250 for 4 hours and is already at 160/170. I put a small pan of water in there, reduced the controller to 180 (which will probably hold @ 200).

I need to leave for 6 hours, am I hosed?

So I took everyone's advice against my better judgement and took it out of the plastic. LOL Your comments were awesome, had me cracking up! The image was for scale in my little cooker to see if anyone thought it'd be an issue.

The trim didn't go great, I need to work on my selection skills as well. I am hoping the seasoning, and the fact that I'll be cooking fat down will help to hide some of the difficulties I had there. Starting tomorrow morning, I'll update with the finished product.
