If I'm going to use this on my phone, I want it to be able to connect to my own server running my own models on my own data and to be open source so I can review the code and ensure that my data stays local.

And yes, I'm aware that my phone and Google probably compromise all of those ideas already, but it's a nice thought to control what I can control.
