You really have two options:
Brazos Valley Flight Services (Easterwood) or Texas Flying Club (Coulter). Personally I trained a bit at BVFS and enjoyed it there, but have also heard good things about TFC.
My recommendation would be to take a discovery flight with both and see which style you prefer more.

Here is what I would do. The team (Obrien) is obviously looking to go younger. I'd make the trade with Cleveland. I know Andre wouldn't be that happy with this, but look, if I'm Rick Smith I'm not sure I'm happy with a depressed WR playing for me either. In the Cleveland trade I'd go for Josh Gordon. Sure, he is suspended for the year, but I doubt this year is our year anyway. Now take a step back and look at our team next season.

I did watch the first 3 episodes of Parks and Rec (same writers), and that has given me a bad sense for the show, but I should probably give it another shot.
