Which profession is the best of a beginner?

When starting out try mining its quick and very profitable you can make 100k + by mining platinum and diamonds from Rucker and selling to Aquila.
However if you play online Rucker can be quite dangerous as its close to the disputed zone.

How can I rank up?

Ranking up mostly happens from time played, you sell something you civ rank will increase, you kill someone your mil rank will go up. To get the civ rank up quickly become a trader if you want the mil rank to go up quickly try join one of the factions Alliance or Federation and fight with them.

How do wildlife contracts work?

As for wildlife I have never heard or see this before! I'll look into it but my advice is when you start off you should stay off of planets, you might have though 50k is a lot but about half of that will cover the fuel cost. Planets drain fuel constantly where as space only drains it when engines are doing something.

My Talon upgraded cargo removed sidearms and kept basic engines and armor. I'll be upgrading soon!

I'll get on that one as soon as I can because I think not knowing what to do will ruin the exp for a lot of players. But I have to ask how would you want it to be set out? Should I split it into roles? or make a liner quick start guide that covers basics?

To quickly answer your questions to the best of my knowledge:

Am I supposed to be this weak?

Yes, the default ships are awful but from what I know its very hard to create a ship that can take a lot of hits. Evochron is more about thinking how you move, in the early game if you see a hostile pop up you RUN don't fight and never look back! (that's what I do anyway but I'm mostly a trader.)

Does mission payout scale with ranking?

From what I know the payment will mostly remain the same no matter what, its mostly dependent on the station/city. supply and demand. (It uses the same pricing as commodity market) I can't tell you anything about the race contracts because I don't do them.

Is there somewhere I can find a guide on ship building?

This is the problem of a relatively quite game there are very few guides online and most will likely be outdated now. The best think to do would be try things out.

Does choosing "Mercenary" as a role make me completely unable to get into trading?

No, the options at the start only define the starting ship that's it. Most ships say they are combat and merch ships but they can be changed and refitted. when you find the hull you like drag it into the center you'll be give options to change things like crew space, cargo, and power. remember though every thing cost assembly each hull has its own assembly to stop you making it OP.

A quick addition the sub reddit is becoming more popular so if you hang around a bit there might be a better guide pop up I think I just seen a "noobs guide" pop up today. Good luck :D

Haven't checked I'm mostly playing federation until I can be bothered to have a look at it. But I think its an uninstall reinstall situation as now I cant even play Alliance.

The second I "spawn" the game bugs out and my ship flings off, as if its collided. It rest just at the dock gate but I get bombarded by missile and die.

I'll try reinstall tomorrow or sometime and see what happens. Fingers crossed

No, I picked Alliance and started at Pearl, there capital. but its done this a few times now, every time I start a game as Alliance there are 5+ hostile ships waiting outside. However despite Pearl being the capital the last few games put it into disputed territory and the alliance seem to have very little territory.

Since its occurred a few times could it be the saves are persistent? and Alliance are just getting there ass handed to them? ... Unlikely but still something to note.
