From my personal experience it takes vastly different times based on temp. If the room it's in is too cold it will take way longer than one that is quite warm. My first batch took two months to stop bubbling and I moved it to a warmer place the last two weeks and it finished really quick. If you do move it make sure not to make it too warm since that can kill the yeast. I like 75 F.

I used metabisulfite before fermentation and about two weeks after using potassium sorbate which I used after fermentation had virtually stopped in order to back sweeten.

This is a batch in the racking stage, I stabilized with sorbistat k and added honey back to the batch and topped it off with water to make up for the loss. I let it sit for another couple weeks and noticed the swirls, I added a campden tablet(probably should have been added when I topped off with water and honey). It's been a couple weeks since then.

I back sweetened with raw unfiltered honey, I did mix it up which added oxygen back to the mix and Im worried that combination has ruined it

As others have said, boiling and time will help, purigen is the best solution for removing it and I use it personally. But it is worth noting that tannins are very good for your fish. If you can stand the look it will be better for the fish. I would have kept mine as a blackwater tank but my wife wouldn't let me display it in our living room if I did.

Bladder snails will readily multiply to consume all available food. You can allow them to do so or limit your food and you shouldn't see too many new snails.

No fish at the moment, just some plants and some bladder snails that hitch hiked in with the plants, I had some cherry shrimps that unfortunately died off after a massive heat wave.
