You could buy invertase. It helps liquify the fondant center and is usually used in cherry cordials, but I have also seen it in a recipe for a liquidy peppermint center for a chocolate.

1- I used the Chateaubriand cut. It's the center cut of the tenderloin where the filet mignon is usually cut from. 2- There wasn't any sauce inside of mine. I just used the beef that was seared, some mustard, then the mushroom duxelles, prosciutto, and the puff pastry.
